Here are some recommended fall/winter herbs to plant in raised herb beds:
- Lavender – planted in the fall
- Woody herbs (Thyme, Sage, Rosemary) – they overwinter well
- Parsley, Dill, Shiso, Lemon Balm, and Cilantro – prefer cooler temperatures and thrive in the fall
Pro tip: Don’t plant Stevia in the fall because it is extremely frost-sensitive!
